10 minute Lean + Green Chicken Stroganoff

I was inspired to make this delicious meal when I brought home some lovely fresh leeks and zucchini from the Farmers Markets today. Eating plenty of green vegetables should form the basis of a healthy eating plan – cooked simply and quick to retain most of the nutrients and fresh green colour. It’s the perfect every day healthy meal and terrific for those wanting to lose a little pudding off their belly.
What it’s good for:
Chicken is a great source of protein, containing all the essential amino acids needed for a healthy immunity system + repair. Protein also fills you up, so it will stop you over eating and keep you fuller for longer and stimulate the secretion of testosterone and HGH ( human growth hormone ) which = increased energy, weight loss and sex drive.
Green vegetables such as leek, zucchini, spinach and celery are loaded with vitamins, minerals, iron and fibre. Green vegetables help to alkalinize your body. The American journal of clinical nutrition states that alkalizing diets improve bone density and serum growth hormone concentrations, whilst acidic diets contribute to bone and muscle loss.
Serves 2
1 leek, sliced
2 stalks Celery, chopped
2 zucchini, sliced
300 g organic skinless chicken breast, cut into chunks
1 cup low salt Chicken or vegetable stock
100 g baby spinach leaves
1 tablespoon good quality cold pressed olive or flax seed oil ( optional)
Gremolata
2 tablespoons chopped parsley
zest from 1 lemon
Saute the leek and celery with a little water or stock over a medium heat for a few minutes.

Add the organic diced chicken and zucchini and mix through, followed by the cup of Chicken or vegetable stock.

Simmer over a low to medium heat for 3 minutes until chicken is cooked through, then fold in the spinach last and mix through until just wilted.
Spoon into two serving bowls.
Drizzle over a little cold pressed olive oil or flax seed oil.
Sprinkle over combined parsley and lemon zest.
