Ingredients
4 eggs separated
4 tbsp honey
2 tsp vanilla extract
2 tsp baking powder
200 g almond meal
500 g vanilla yoghurt (strained)
zest and juice of 1 lemon
Fresh berries to serve (optional)
Instructions
Combine egg yolks honey vanilla almond meal baking powder and yoghurt. Add the almond meal and mix through. Beat the egg whites until stiff then fold into the yoghurt almond mix. Pour into a baking tin and cook for about 50 minutes until firm to touch. Remove from the oven and allow to cool in the tin. Serve alone or with fresh berries.
