Serving Size Serves 4
Ingredients
2 garlic cloves, crushed
2 spring onions (scallions), sliced
Small handful coriander (cilantro) leaves, chopped
Zest from 2 lemons
3 egg whites
500 g (1 lb 2 oz) minced (ground) lean organic chicken breast
50 g (13/4 oz) macadamia nuts, roughly chopped
100 g (31/2 oz) water chestnuts, chopped
Instructions
Combine all the ingredients.
Add freshly ground black pepper, to taste.
Mix together well, then with wet hands form into small patties.
Heat a non-stick frying pan sprayed with a little olive oil.
Cook over a medium heat until the burgers are golden and cooked through. This should take about 3- 4 minutes each side.
Serve hot or cold.
Note
These burgers are delicious served hot or cold. They can be served with vegetables, a tossed salad or sandwiched between 2 slices of whole grain sourdough.
