Instructions
1 cup organic plain flour
1 cup organic wholemeal flour
1 tsp. cinnamon
pinch of sea salt
1/2 cup raw sugar
3 egg whites
1 1/4 cups apple sauce
1/4 cup (60 ml / 2 fl oz) skim milk
1/4 cup (60ml/2fl oz)macadamia nut oil
1/2 cup walnuts chopped
1 1/4 cups (250 g / 8oz) fresh or frozen blueberries
Instructions
Heat oven on a moderate setting 180 C (350 F / Gas mark 4).
Combine flour, cinnamon, salt and sugar into a bowl and mix well. Add the egg whites, apple sauce, milk, oil and walnuts. Mix through until just combined. Fold though the blueberries last until just mixed through. Spoon into prepared muffin tins. Bake for 25 - 30 minutes until cooked though and golden.
